Steak

Depending on the cut taken, you can get two different types of steak. If you cook it from a thin edge - this is a strip-loin steak, from a thick one - a ribeye. And in the first case, additional processing will be required: it is important to remove a small vein from the wide side. The thickness of the right steak is at least 2 cm. The meat must be ripe and must lie on the table for half an hour after cooling to warm up to room temperature. After that, the steak is greased with vegetable oil (but not salted or pepper) and fried in a hot frying pan, grill pan, grill or barbecue for three minutes on each side. The finished meat must be allowed to lie down for 2 minutes on a warm plate, covering it with foil on top. Only after this is the dish flavored with salt and pepper and served on a warm dish so that it cools down more slowly.

Roast beef

To prepare the dish, use a part of the rump of the same name or pulp and a cut from a shoulder blade. The meat is also allowed to warm up after cooling, but it is sprinkled with salt and pepper still raw. After that, the piece is quickly fried in a hot pan so that the meat is covered with a crust. In this form, it is rubbed with butter and mustard and wrapped in foil, tightly clamping all the edges. You need to bake the roast beef for 40-50 minutes, preheating the oven to 180 degrees.
