Products required for cooking

To prepare a sauerkraut stew according to German traditions, you will need the following ingredients: 500 g sauerkraut, 1 apple, 100 ml apple juice, 50 g plums, a tablespoon of butter, 1 onion.

It is recommended to pre-soak the sauerkraut and squeeze it well. Otherwise, the cabbage stewed in German will turn out to be too salty. In addition, cabbage that is too coarsely chopped before salting, it is advisable to additionally chop it. Also, do not use ready-made apple juice saturated with sugar and preservatives. Better not to be lazy, rub a few apples and squeeze out the natural juice.

German-cooked cabbage is often used as a side dish for baked shanks, sausages, and duck. However, you can use stewed cabbage and as an independent dish.

German Braised Cabbage Recipe

Onions are peeled and chopped into thin half rings. Apples and plums are washed in running water. The bones are removed from the plums. The apples are cut in half and the hard core with seeds is removed. Cut the fruit into neat strips.

In a deep roasting pan, heat the oil over high heat. First of all, sauerkraut is fried. You only need to take 2/3 of the product. While cooking, when the cabbage is soft enough, add onions to the roasting pan. To prevent the dish from burning, it is necessary to stir the ingredients periodically.

As soon as the cabbage and onions are fried, fruits are transferred to them. After this, the dish continues to cook for another 5 minutes. Then, apple juice is poured into the brazier, cover it with a lid and stew the cabbage for about 10 minutes over medium heat. The remaining sauerkraut is added to the prepared dish. The components are mixed and served to the table.

Of course, the preparation of stewed cabbage varies greatly from region to region. For example, some recipes suggest adding juniper berries to the dish. There are options for a dish with porcini mushrooms, prunes, with the addition of carrots, garlic and sugar.

The German-style cabbage stew gives you plenty of room for creativity. Any housewife can prepare a dish, creating her own original recipe. And the proposed cooking method can be considered as a basis.
