At first glance, the recipe for making macarons is quite simple: even a novice hostess is capable of mixing whipped proteins with chopped almonds and baking the resulting mass in the oven in the form of small circles. However, everything is not as simple as it seems, and real macaroons require knowledge of some of the tricks and nuances of cooking.

- delicate crispy crust;

- the presence of a small "skirt";

- delicate filling, the thickness of which corresponds to the thickness of the biscuit.

Cooking a legendary delicacy requires concentration and care: deviations from the desired baking temperature, the wrong amount of ingredients, violation of the manufacturing technology - all these factors can lead to a disappointing result.

In the event that almond flour is not at hand, you can prepare it yourself by grinding almonds into a fine powder in a food processor. After that, the flour is thoroughly mixed with powdered sugar.

Beat the whites until a thick foam, gradually adding sugar to them and, if necessary, a few drops of food coloring.

After a while, they take out the baked goods, wait for it to cool completely and begin to combine the halves of the cookies with the help of the filling.

Jam, cream, various pastes or ganache can be used as a filling. For example, classic chocolate ganache is made with equal amounts of dark chocolate and cream.
