Porridge is undoubtedly considered a traditional dish in Russia. Back in the 19th century, the Guryev porridge was extremely popular among the nobility, which is a variant of semolina, but baked in the oven with the addition of nuts, honey, jam and various fruits.
Count Guriev and porridge
There are two origins for this wonderful dessert. One version says that Guryev porridge appeared in Odessa, and it was created by the cook of Count Guryev, who served as the mayor in this city.
Another version says that Count Guriev was once invited to dinner by a retired major Yurusovsky. At this dinner, a delicious, unusual porridge prepared in an original way was served as a dessert. Guriev, a man close to the emperor, was difficult to surprise with culinary masterpieces, but this dish made an indelible impression on him. Yes, such that he ordered the cook to be invited to the dining room and, as a result of a short auction, bought him with his family from the major. That is why the name Guryevskaya was firmly entrenched for the porridge, although its biggest fan did not even know the recipe for its preparation.
Gradually, Guryev's porridge began to conquer the estates of Russian nobles. And for a short period of time it spread to all country mansions. And as soon as the recipe for this dessert was included in printed collections on cooking, Guryev porridge became popular in European countries.
Guryev porridge recipe
It is worth considering the recipe for this extraordinary dish according to the rules of its creator. You should start by preparing the base - semolina porridge. In boiled milk, you need to gradually add semolina, which has already been mixed with salt, sugar and seasonings. This mixture is brewed with constant stirring for no more than 10 minutes. The amount of semolina should be such that the porridge is thick.
Then you need to boil the cream until the foam forms, which is required for the preparation of the dessert. The more you remove the foam, the tastier the porridge will turn out. Once everything is ready, take a ceramic pot and grease it with oil. Then start laying out the ingredients in the following sequence: semolina, nuts, fruits or dried fruits you cooked, foam with cream. And so several layers. After that, put the dishes with the dessert in the preheated oven for 30 minutes. If desired, after cooking, the top of the dessert can be decorated with any fruits or nuts. Everything, a delicious and unusual dessert is ready.
Guryev porridge is still being prepared, but today the recipe for its preparation has been very varied. They began to use dried fruits, apricots, bananas, fresh berries and vanillin, which gives the dish an amazing aroma.
