Cranberry kissel is a tasty and healthy drink that contains many vitamins and helps prevent and treat colds. To prevent vitamins from escaping from the cranberries during heat treatment, the chefs squeeze juice from the berries, and then add it to the finished product, cooled to room temperature. As a result, cranberry jelly retains its benefits and gives the human body a good boost of energy and vigor.

Ingredients

To make jelly, you need 200 ml of pure cold water, 2 tablespoons of sugar, 1 tablespoon of potato starch (without a slide) and 50 grams of fresh or frozen cranberries. Rinse the cranberries thoroughly with running water, measure the remaining ingredients and arrange in such a way that they are convenient to use for preparing a drink.

Cooking method

Rinse the cranberries thoroughly with clean water and mash with a spoon or crush. Put the resulting mass on a clean handkerchief or cheesecloth, folded several times, and squeeze the berries into a glass or ceramic dish. Put the dishes with juice in a cool, dark place. During the preparation of jelly, squeezed cranberry juice is not boiled, therefore the finished drink has a rich taste and retains vitamins.

Put the cranberry cake in an enamel saucepan, pour 200 ml of clean cold water, bring to a boil and immediately remove from heat. Strain the broth into a glass through cheesecloth folded several times. See how much broth you got: if the glass is not full, add boiled water to it. After that, pour the fourth part of the broth into a bowl, cool to room temperature and dilute one tablespoon of starch in it.

Add two tablespoons of sugar to the remaining three quarters of the broth and put the resulting mixture on fire. As soon as the broth boils, pour the decoction with starch into it and mix everything thoroughly. Let the jelly boil and immediately pour it into a ceramic bowl until it is completely cooled.

To cool the jelly faster, you can put the dishes in a pot of ice water. When the drink has cooled to about 50 degrees Celsius, cranberry juice should be introduced into it in a thin stream and mixed thoroughly until a homogeneous mass is obtained.

A glass prepared for cranberry jelly can be beautifully decorated. To do this, grease the edge of the glass with a slice of lemon and dip it in sugar or powdered sugar. Then fill the decorated glass with cranberry jelly. Pay attention to how bright and aromatic it turned out, and all this thanks to the inclusion of natural cranberry juice in its composition.
