Potato pies fried in vegetable oil are an incredibly satisfying dish. It is not difficult to cook them, and if you strictly follow the recipe given below, they will turn out to be incredibly soft and fluffy.

It is necessary

  • For the test:
  • - 500 ml of fresh milk;
  • - 1, 5 tsp dry yeast;
  • - a quarter glass of vegetable oil;
  • - Art. a spoonful of sugar;
  • - a pinch of salt;
  • - three to four glasses of flour.
  • For filling:
  • - 700 g of potatoes;
  • - two large onions;
  • - salt (to taste);
  • - a little vegetable oil (for frying onions).

Instructions

Step 1

The first step is to prepare the dough. So, you need to slightly heat the milk (up to about 40 degrees), pour yeast and sugar into it, mix well.

Step 2

Next, mix three glasses of flour with salt and add a little to the milk mixture, stirring everything thoroughly so that there are no lumps. Put for 10 minutes (no more) in a warm place (during this time the dough will rise twice).

Step 3

While the dough is rising, it is necessary to peel the potatoes and onions, put the potatoes to boil, and the onions to fry over medium heat (they must be constantly stirred so that they do not burn).

Step 4

As soon as 10 minutes have passed, you need to add a little flour to the dough, mix, and again let stand in a warm place for 10 minutes (the dough should rise twice again).

Step 5

In the meantime, you need to drain the water from the potatoes, crush them, salt, add the fried onions and mix thoroughly.

Step 6

Put a tablespoon of flour on the work surface, spread the flour over the surface and dump the dough. Divide it into 8-10 parts and make balls (the dough can be divided into more parts, but no more than 14). Roll each ball slightly (you can knead it with your hands), put a tablespoon (maybe a little more) of potato filling on the dough and carefully connect the edges of each pie (you need to fasten it well so that they do not fall apart during frying).

Step 7

Heat a frying pan, pour in vegetable oil and fry the pies over medium heat, covered for five to seven minutes. Fried patties with potatoes are ready.
