Cook the compote only from fully ripe fruits. In order to get a drink with the greatest amount of nutrients contained in ripe cherries, it is recommended to cook it as follows. Go over the cherries, remove the stalks, wash. Squeeze the juice out of it. You can also use a juicer for this, but then you will have to spend a lot of time removing the seeds. To speed up the process, place the cherries in a saucepan and crush them with a regular wooden pestle. Transfer the resulting mass to a colander or sieve and drain the separated juice. Put the dishes with juice in the refrigerator.

Pour water into a saucepan for making compote, bring it to a boil. Pour in sugar and add the grated cherry mass along with the seeds. Simmer over medium heat for 5-7 minutes. Remove from heat and let the compote cool. Strain it through a sieve. Pour in the juice prepared in advance.

Step 3

You can also cook compote from frozen cherries. After taking the bag of cherries out of the refrigerator, let them thaw completely. Pour the released juice into a glass. Pour the defrosted cherries with water, add sugar and bring to a boil. When the compote has cooled, pour in the juice.

Step 4

Dried cherry compote has a peculiar taste. Sort it out first and rinse thoroughly. Soak in warm water for 30-40 minutes and only then set to cook. When the compote boils, add sugar to it to taste. In such a compote, you can put other dried fruits, which should also be soaked beforehand.
