  • - 250 g sour cream (30% fat).
  • For Philadelphia with President cheese:
  • - 200 g of cottage cheese (5% fat);
  • - 200 g of President cream cheese.

Step 1

Homemade Philadelphia cheese

Pour the pasteurized milk into a saucepan over a low heat and, stirring occasionally, start heating. Add granulated sugar and salt before boiling. As soon as the milk boils, immediately pour in the kefir, which should be at room temperature. Stir everything thoroughly until the mixture curdles. Then line the colander with 4 layers of cheesecloth. Place a container under the colander where excess liquid will drain.

Step 2

Pour the curd into a colander. For 15-20 minutes, while the whey is draining, mix the mass very gently a couple of times with a spoon (you cannot squeeze it with your hands). In a separate bowl, beat the egg with a pinch of citric acid until foamy. Then gradually add the cooked curd mass (while still warm). Stir everything very well until smooth. It is better to beat all the ingredients with a mixer. Then cool the resulting homemade cheese. It can be used in place of Philadelphia for baked goods and desserts.

Step 3

Home-style "Philadelphia" from cottage cheese

Combine sour cream with fat-free creamy cottage cheese. Whip the cream with a mixer or blender. Then gradually, while continuing to beat, add the cooked curd mass. Season with salt to taste and mix all ingredients well. Then leave the cheese at room temperature for a day to ripen. After this time, transfer the "Philadelphia" home-style to the refrigerator, where it can be stored for a month. The cheese made with this recipe is used to make cheesecakes and other baked goods.

"Philadelphia" from sour cream

Mix sour cream very thoroughly with different percentages of fat. Then transfer the mixture to a canvas bag or cheesecloth folded in several layers. Hang over a container overnight where excess liquid will drain. In the morning, in a canvas bag, you will get a very thick sour cream of high fat content, which, if necessary, can also be replaced with Philadelphia cheese in baked goods.
