It is necessary

    • zucchini 3 kg;
    • onions 1 kg;
    • carrots 1 kg;
    • salt 2 tbsp. l.;
    • sugar 1 tbsp. l.;
    • tomato paste 4 tbsp l.;
    • vegetable;
    • garlic 6-7 cloves;
    • dill
    • parsley;
    • freshly ground pepper.

Instructions

Step 1

Prepare food. Wash and dry zucchini, carrots. Peel the carrots and wash again, do the same with the onions. Pay attention to the zucchini from which you are going to cook caviar: if they are young, then you can start cooking, if they are old, then be sure to cut off the peel - it becomes thick and tough. Cut the courgettes into small cubes, grate the carrots on a coarse grater, and cut the onion into quarters into rings.

Step 2

Take a stewpan (deep frying pan), heat over high heat, add vegetable oil. Fry the zucchini for seven to ten minutes (until half cooked). Remove them from the pan, leaving the oil in it. Set the courgettes aside.

Step 3

Fry the onions in the same skillet until soft and golden brown. Transfer to the zucchini without overflowing the oil. If there is very little of it left, add a couple of tablespoons, and fry the carrots for three to four minutes.

Step 4

Take sauteed zucchini, onions, and carrots. Grind them with a blender, or pass through a meat grinder. Transfer the resulting mass to a thick-walled dish (saucepan or saucepan), preferably anti-stick.

Step 5

Place the cookware over medium heat and bring the mixture to a boil. Reduce heat to low and simmer the dish for half an hour with the lid closed.

Step 6

Peel the garlic, chop it finely (or pass through a garlic press). Rinse the greens thoroughly, shake off excess water and chop.

Step 7

After half an hour, add herbs, garlic, salt, sugar, pepper and tomato paste to the puree. Stir the mixture thoroughly and simmer for another ten minutes.

Step 8

Spread hot caviar in sterilized jars and roll them up. Wrap the jars with towels or a blanket, leave to cool completely.
