Calf kidneys are a dietary by-product, as they contain a huge amount of vitamins, minerals and enzymes, and very little animal fat. Dishes from the kidneys are perfectly digestible and are suitable for people with a weakened digestive system.

- 600 g veal kidney;
- 1 tbsp flour;
- 0.5 tsp salt;
- 1 onion;
- 2 tbsp vegetable oil;
- 125 ml of meat broth;
- 100 g cream;
- 1 egg (yolk);
- 2 tbsp grated cheese;
- 2 tbsp cognac;
- ground pepper
- parsley to taste.
Instructions
Step 1
Slice the calf kidneys in half lengthwise, cut out the inner films and rinse well. Place the kidneys in a bowl, cover with cold water and soak for forty minutes. Change the water at least three times during this time.
Step 2
Remove the by-products, rinse them again under running cold water, dry and cut into small pieces no more than one centimeter thick. Peel and wash the onion, cut it into half rings.
Step 3
Heat a skillet with vegetable oil, put onions in it and fry over medium heat until it becomes transparent.
Step 4
While the onions are fried, combine the flour and salt and roll the kidney pieces in it. Place the kidneys in a skillet with onions and sauté them on all sides over medium heat for five minutes.
Step 5
Add the broth to the skillet, bring to a boil and remove from heat. Crack the eggs, separate the whites from the yolks. Pour the cream into the yolks.
Step 6
Grate the cheese and put it in a bowl with yolks and cream. Mix everything, pour in the meat broth, add brandy, salt, pepper and mix everything again.
Step 7
Pour creamy sauce over the prepared kidneys, garnish with finely chopped parsley before serving. Garnish with mashed potatoes for this dish.
