Step 1

In order to cook trout liver, it is important to gut the caught fish with high quality. If the liver is allowed to come into contact with bile, it will be extremely difficult to get rid of the bitterness. Therefore, open the belly of the fish and pull out the insides with extreme caution to prevent rupture of the gallbladder next to the liver. To do this, make a not too deep incision in the abdomen, if the fish is cut into two parts, then the likelihood of opening the gallbladder increases.

If bile is still spilled, then soak the fish in cold water with the addition of salt for an hour. The more thoroughly the fish is washed, the less likely the finished dish will taste bitter.

Place the potato and trout liver pot in the oven preheated to 200 degrees. The liver cooks quickly enough, but it takes at least half an hour for the potatoes to soften.

Step 8

Five minutes before turning off the oven, carefully remove the lid from the pot and pour the grated cheese and chopped dill onto the dish. This will make a fragrant crust.
