Kulebyaka is an old Russian dish. Vegetables, meat, fish and offal can be used as fillings for kulebyaki. This pie is hearty, juicy and delicious. You can bake both a large kulebyaku and small kulebyachi - pies. You can serve kulebyaka as a separate dish, or you can serve it with broth.

- Dough:
- 25 gr. (1 sachet) dry yeast
- 3.5 cups wheat flour
- 1.5 cups milk
- 100 g margarine or spread
- 2 egg yolks
- 1 teaspoon of salt
- ¼ teaspoon sugar
- Filling:
- 700-800 gr. pork or beef liver
- 1 glass of milk
- 3 large onions
- 100 g vegetable oil
- salt
- ground black pepper
- vegetable oil for frying
- butter for greasing baked goods
Instructions
Step 1
We dilute the yeast in one glass of warm milk (30 degrees), after dissolving sugar in the milk. After 5-10 minutes, the yeast begins to "walk", a foam appears on the surface.
Step 2
In half of the sifted flour, add the rest of the milk, yeast and knead the dough. We put the dough in a warm place for 30 minutes.
Step 3
After the dough has risen, add the rest of the flour, salt, dissolved spread or margarine, whipped yolks and knead the dough.
Step 4
We put the dough to rise for 1, 5-2 hours in a warm place.
Step 5
Cooking the filling. Cut the liver into strips, no more than 1 cm thick. Put in a deep dish and fill it with milk. Let stand for 1 hour.
Step 6
Peel and finely chop the onion.
Step 7
Saute the onion until golden brown.
Step 8
Fry each piece of liver for 5-7 minutes over high heat in vegetable oil.
Scroll the fried pieces through a meat grinder.
Step 9
Combine the liver with onions, add salt, pepper, vegetable oil and mix well - the filling is ready.
Step 10
Roll out the finished dough in the form of an oval cake. Put on a greased baking sheet.
Step 11
We spread the filling in the center of the cake in a small chunk and slightly level it not to the brim. Lifting, we connect the edges of the cake and pinch them.
Step 12
Before sending the product to the oven, it should stand in a warm place for 30 minutes. At the same time, the baking sheet should be covered with a towel so that the top of the kulebyaka does not wind up.
Step 13
We bake the kulebyaka in a preheated oven at 180 degrees for 40-45 minutes.
Step 14
We grease the freshly cooked kulebyaku with butter.
