You will need: Adyghe cheese - 200 g; tomato - 2 pcs.; zucchini - 1/2 pc.; dill or parsley - 50 g; ghee or vegetable oil - 1 tsp; pita bread - 1/2 sheet; spices - asafoetida, black salt, black pepper, turmeric.

Wash tomatoes and zucchini thoroughly. Cut the washed vegetables into small cubes. Optionally add chopped bell peppers or other seasonal vegetables such as cauliflower to the omelet.

Grate a piece of Adyghe cheese on a coarse or medium grater. Chop the herbs finely. Place the skillet over low heat. When the pan is hot, melt the ghee or vegetable oil in it. Fry spices in oil - asafoetida, black pepper, turmeric. When the spices begin to reveal their scent, immediately add the chopped tomatoes and zucchini to the skillet. Be careful not to burn the spices.

Asafoetida is an amazing spice that improves digestion and has a garlic-onion aroma and flavor. Its peculiarity is that after taking asafoetida, there is no unpleasant odor from the mouth. In order for the beneficial properties of this spice to be revealed, it is important not to overdo it with it.

Turmeric is a unique spice with healing properties. It is even called a natural antibiotic. Turmeric can be added to many dishes, such as soups or stews. It does not have a pronounced taste, but it gives the dishes a beautiful golden color.

Add chopped vegetables to the heated spices. Saute over medium heat until the tomatoes produce juice. Reduce the heat slightly and place the grated cheese in the skillet. Sprinkle with chopped dill or parsley on top. Cook for a few more minutes until the cheese is slightly melted.

Wrap the finished dish in pita bread and fry it on both sides. You can also serve the "scrambled eggs" with fried toast made from yeast-free bread or with veggie pancakes.
