The main ingredient for good meringues is impossible to buy: it is air. It is he who gives the baked goods splendor and tenderness. To introduce as much air into the dough as possible, use large bowls that leave plenty of space, and raise the sieve higher when sifting. Stir the ingredients thoroughly, stir in the additives gradually using a large metal spoon to prevent the dough from settling, and bake immediately after mixing.

- 300 g raspberries
- 175 g of fine granulated sugar + 2 more tbsp. l.
- 3 egg whites
- 1 tbsp. l. sifted cocoa

Step 1
Preheat oven to 150 ° C. Divide the raspberries into 4 tins and add half a tablespoon of sugar to each.
Step 2
Whisk the whites until stiff. Continue whisking, adding the rest of the sugar, 1 tablespoon at a time, until a thick, shiny mass is formed.
Step 3
Add the cocoa, stir until smooth and place the meringue on top of the raspberries. Bake for 15-20 minutes, until the meringue is golden brown and crispy.
