Beans with smoked pork, spices and tomato paste are a national dish of Romanian cuisine, which is distinguished by its special nutritional value, wholesomeness and satiety. Such a dish is prepared quite simply, but it requires a certain investment in time.

Ingredients:

  • 0.3 kg white small or large beans;
  • 0.6 kg of smoked pork (preferably with small streaks of bacon);
  • 1 tbsp. l. starch;
  • 2 tbsp. l. tomato paste;
  • 2 tbsp. l. olive oil;
  • 1 carrot;
  • 2 onions;
  • 2 bay leaves;
  • 10 black peppercorns;
  • 1 tsp dried thyme;
  • 1 tsp dried dill;
  • ¼ h. L. ground white pepper;
  • salt to taste.

Preparation:

  1. Pour the beans into a deep plate, rinse thoroughly, cover with cold water and leave to swell for one night.
  2. In the morning, rinse the swollen beans thoroughly and discard in a colander.
  3. Cut a piece of pork with a knife into 2-3 pieces. Peel and cut one onion in half, just peel the carrot.
  4. After 10-15 minutes, pour the beans from a colander into a saucepan. Put pieces of smoked pork, bay leaves, 2 halves of an onion, one carrot, thyme and peppercorns there.
  5. Top up the contents of the saucepan with cold water so that it covers all the ingredients.
  6. So, place the beans with smoked pork on the stove, bring to a boil and cook until the beans are cooked, reducing the heat to a minimum.
  7. Meanwhile, peel the second onion and cut into small cubes.
  8. When the beans are ready, remove the saucepan from the heat, take 5 tbsp from it. l. broth and pour them into a cup.
  9. Add tomato paste to the broth. Mix everything until smooth. Then add starch to the tomato mass and stir everything so that the lumps disappear.
  10. Pour the tomato mass into a saucepan with the beans and meat. Add onion cubes, salt, white pepper and olive oil there.
  11. Remove the boiled carrots from the saucepan, cut into small cubes and throw back into the saucepan.
  12. Place the saucepan on low heat again, mix its contents gently and cook until the onions are soft with the lid closed.
  13. At the end of cooking, remove everything from the heat. Remove large pieces of pork, cut into medium slices and put back in the saucepan.
  14. Sprinkle ready-made beans with smoked pork in Romanian style with dried dill, sprinkle on plates and serve!
