    • lamb kidneys - 300 g;
    • champignons - 3 pcs.;
    • shallots - 1 pc.;
    • garlic - 2 cloves;
    • grated parmesan - 80 g;
    • parsley - 2 branches;
    • puff pastry - 1 large sheet;
    • yolk - 1 pc.;
    • olive oil;
    • pepper;
    • salt.

Instructions

Step 1

Carefully, in a circular motion, separate the pulp from the bone, being careful not to damage the meat around.

Clean well washed and soaked buds from films and white streaks inside, cut into small cubes.

Peel the mushrooms and also cut into cubes.

Heat the skillet very hot, pour in the olive oil and lay out the kidneys. Stir well and fry them for 1-2 minutes. They should only brown a little. Drain them in a colander and let the oil drain. Minced meat should not be fatty.
