- - 85 g finely chopped dark chocolate

- - ¾ Art. hot water
- - ¾ Art. flour
- - ¾ sugar
- - ½ tsp salt
- - ½ tsp baking powder
- - ¼ Art. + 2 tablespoons rapeseed oil
- - 2 large eggs
- - 2 tsp vinegar
- - 1 ½ tsp vanilla extract or vanillin on the tip of a knife
- - 1 ¼ st. cherry filling (such as cherry jam)
- - 1 ½ tbsp. heavy cream
- - ¼ Art. Sahara
- - some chocolate chips for decoration
- - 12 paper baking tins
Instructions
Step 1
Turn on the oven to preheat to 350 ° C. Pour the chopped dark chocolate and cocoa powder with hot water and beat until smooth. Chill the bowl of chocolate in the refrigerator for 20 minutes, stirring occasionally.
Step 2
In a bowl, combine the sifted flour, sugar, salt and baking soda.

In a separate bowl, stir together the rapeseed oil, eggs, vinegar and vanilla extract (vanillin).

Stir the chocolate mass with the butter mixture, then add the flour and beat until a homogeneous consistency is obtained.

Fill the muffin tins 2/3 full with dough. Bake in a preheated oven for 17-19 minutes, check the readiness of the muffins with a toothpick. Chill the finished muffins.
Step 6
Make a deep hole in the center of each muffin and fill with 1 ½ tablespoons of cherry filling.
Step 7
Whisk the chilled heavy cream on high with a mixer until peaks. Add ¼ cup sugar and beat again. Place some whipped cream on top of the cherry-filled chocolate muffins. Garnish each cupcake with fresh cherries and chocolate chips.
