Black Forest cherry cake is considered one of the most famous and beloved in German cuisine. Over the years, it has gained popularity among the sweet tooth around the world. In Russia, it is sometimes sold under the name "Black Forest". The main ingredients of the cake are chocolate sponge cake, whipped cream and, of course, cherries.

- 100 g dark chocolate
- 100 g butter
- 150 g sugar
- 1 bag of vanillin
- 5 eggs
- 100g flour
- 50 g starch
- 50 g ground almonds
- 1 tsp baking powder
- 3 leaves of gelatin
- 2 cups compote cherries
- 800 ml cream
- 4 tablespoons cherry vodka
- chocolate chips
Instructions
Step 1
Break the dark chocolate prepared for the dough into small pieces, place in a small bowl and heat in a water bath until it completely melts, after which you can let it cool slightly.
Step 2
Combine butter, warmed to room temperature, with sugar and vanilla until a frothy mass is formed. Separate the yolks from the whites. Mix the yolks with the butter-sugar mixture and continue beating until the mass starts to turn white, then add the cooled chocolate here.
Step 3
Place the whites in an absolutely clean, fat-free bowl, beat them until a strong foam is formed, using a spoon, gently pour the foam into the mixture of butter and yolks from bottom to top.
Step 4
Mix the flour, starch, baking powder and ground almonds separately, sprinkle the contents of the first bowl with the resulting mixture, mix gently.
Step 5
Thoroughly grease a round baking dish with a diameter of 26 or 28 cm, pour the biscuit dough into it, bake at 180 ° C for 20-25 minutes. Cool the finished biscuit, cut with a thread into three identical cakes.
Step 6
Soak gelatin in cold water. Strain the cherries from the compote, and do not pour the resulting liquid - it will still be useful to you.
Step 7
Set the 12 berries aside as you will need them for later decorating. Boil the compote in a saucepan, if you wish, you can add a little cinnamon or cloves to it. Squeeze out the gelatin, dissolve it in a hot compote.
Step 8
Add some vanillin to the cream and beat until firm. Sprinkle the sponge cake with cherry vodka, brush with cherry jelly, spread half of the cherries you have on it. Spread some whipped cream over the berries, smooth out thoroughly with a knife or spatula.
Step 9
Carefully place the second cake on top, do the same with it. The third cake will be final, it should also be covered with a layer of cream.
Step 10
Place the remaining cream in a pastry syringe, squeeze 12 small curls out of it around the circumference of the cake. Place a cherry in the center of each curl. Cover the sides of the cake with butter cream, sprinkle with chocolate chips. Black Forest cherry cake is ready.
