For lovers of the Black Forest cake, this version of making cherry jam is a godsend. This is the taste that the cherry layer of the mentioned confection has. Therefore, the jam can be used for baking, spread on a bun, or simply enjoyed with tea.

It is necessary

  • - fresh cherries - 1 kg;
  • - granulated sugar - 0.5 kg;
  • - citric acid - 3 g;
  • - gelatin granules - 25 g;
  • - instant coffee - 2-3 tbsp;
  • - cocoa - 3 tablespoons;
  • - cherry liqueur, cognac - 50 ml.

Instructions

Step 1

Rinse the cooked cherries in water. Remove seeds from berries and stems, but save juice. Fold in a voluminous basin, preferably in a copper one.

Step 2

Sprinkle the berries with granulated sugar, mix. Add all the bulk ingredients listed in the recipe, namely instant coffee, cocoa and citric acid. Mix foods again.

Step 3

Lastly, add gelatin granules to the berry mix, stir it thoroughly. Leave the cookware with future cooking for 2 hours. During this time, the berries will give off juice, in which all the ingredients will dissolve.

Step 4

After the time has passed, put the bowl of food on the fire. Heat the mixture a little, but do not bring to a boil.

Next, process the berry mass with a blender. Do this so that half of the berries remain intact.

Step 5

Then put the jam container back on the stove. Simmer the food for 5 minutes.

Wash jars for cherry jam, sterilize in advance. Do the same with the lids.

Step 7

After removing the bowl of cherry jam from the stove, pour in the liquor or brandy. After mixing, you can lay out the finished jam in jars. Turn the sealed cans with the lids down, hold in this position for 15-20 minutes.

It is better to store ready-made Black Forest cherry jam in the refrigerator or in the cellar.
