Most often, pork neck is used, which is passed through a meat grinder. Delicious kupat is made from mutton. If too lean meat is used, some of it is replaced with lard.

Prepared minced meat is mixed with chopped garlic, adding table salt and spices to taste. So that the filling is thoroughly and evenly saturated with seasonings, it is left alone for a couple of hours, be sure to cover it with a lid. Throughout this time, the minced meat must be thoroughly mixed several times.

While the minced meat acquires the desired taste and aroma, you can start preparing the intestines. For the preparation of kupat, lamb or pork intestines are used. Pre-clean the untreated intestines by turning them inside out. Then they need to be rinsed thoroughly. Then place the shell on a cutting board and gently clean the inside and outside with a dull knife. A well-sharpened knife will easily cut through the intestine and make it unsuitable for cooking kupat.

Tie the end of the filled sausage with a thread. You should also pierce the kupat in several places for air to escape. You can cook kupaty at home by frying in a pan or baking in the oven. Previously, it is recommended to boil the sausages in boiling water for 1-2 minutes.
