Mushrooms are an amazing product that turns any dish into a masterpiece. With their addition, you can cook julienne, goulash, caviar, soup, vegetable stew, salads, cutlets, dumplings, pies. Also, delicious snacks are obtained with mushrooms.
Mushroom pancakes
For breakfast, you can make light mushroom pancakes. This dish is made quickly and easily.
For cooking you will need:
- mushrooms - 250-300 grams;
- onion - 1 pc.;
- green onions - 2-3 branches;
- hard cheese - 100 grams;
- egg - 1 pc.;
- low-fat sour cream - 2-4 tablespoons;
- flour - ½ cup;
- spices to taste.
From the listed ingredients, you should make about ten servings.
Peel and finely chop the onions. Heat a skillet over a fire. Fry the onions in a skillet in vegetable oil until delicious golden brown.
Peel the mushrooms, cut them into small cubes, add them to the fried onions. Season the mushrooms and onions with salt and pepper. Fry food until tender, stirring constantly.
Beat one egg in a bowl. Chop the green onion finely. You can also use other greens if you wish. Add chopped green onions and sour cream to the egg mass. Transfer the mushrooms fried with onions to a bowl. Grate the cheese through a grater. Transfer the cheese to a bowl of dough. Add salt and pepper if necessary. Stir the resulting mass.
Put the prepared dough in portions in the pan using a large spoon. Fry the pancakes on both sides until tender. The finished pancakes should have a beautiful crispy color.
Pour sour cream or sauce over the pancakes before serving. You can also prepare a sauce for such pancakes with the addition of mushrooms. Top with pancakes, you can decorate with finely chopped herbs.
Mushroom casserole
This dish turns out to be airy, aromatic and tasty.
For cooking you will need:
- mushrooms - 500 grams
- onion - 1 pc.
- eggs - 3 pcs.
- carrots - 2 pcs.
- white bread - 3-4 slices
- milk - ½ cup
- bread crumbs
- marjoram, salt, pepper - to taste
Soak the flesh of the bread in the milk. Fry finely chopped onions in a skillet with butter. Add the mushrooms grated through a coarse grater. Simmer the mushrooms for about ten minutes.
Peel and grate the boiled carrots. Transfer it to the mushrooms and continue to simmer. Add salt and pepper. Transfer the soaked bread to the mushroom mixture.
Separate the whites from the yolks. Whisk the whites until a white, fluffy mass is obtained. Beat the yolks until the mixture is white and smooth. Combine the yolks with the braised mushrooms. Combine the resulting mass with proteins. If necessary, salt the prepared mass, add marjoram.
Prepare a baking dish. Grease it with butter, sprinkle with breadcrumbs. Transfer the mushroom mass to a mold and place in a preheated oven. The casserole is cooked at a temperature of 180 ° C for 40-50 minutes.
