Sardines are small commercial fish. It is only up to 25 cm long and is mainly processed for canned food. But fresh sardines can also be cooked very tasty, for example, marinated with lemon and garlic.

It is necessary

  • - 1 kg of sardines;
  • - 1, 5 glasses of vegetable oil;
  • 1/2 cup white vinegar
  • - 2 cloves of garlic;
  • - 1 lemon;
  • - 1 tomato;
  • - 1 tsp Sahara;
  • - 4 tablespoons flour;
  • - 2 bay leaves;
  • - 1 tsp rosemary;
  • - 4-5 peas of black pepper;
  • - salt to taste.

Instructions

Step 1

Peel the guts from the sardines, wash the fish, salt and place in a bowl. Squeeze the lemon juice over the sardines and marinate for half an hour.

Step 2

Put the pan on the stove, pour in the vegetable oil. Dip the sardines in flour and brown until golden brown on both sides. Transfer the fish to a napkin or towel to cool and drain off excess fat.

Step 3

While the sardines are cooling, prepare the tomato puree. To do this, remove the skin from the tomato, remove the juice with the seeds and chop the pulp in a blender.

Step 4

In another pan, you can wash the first one, pour in vegetable oil and heat until boiling. Then add flour and fry it, stirring occasionally, with a wooden spatula. Dissolve a tablespoon of tomato puree in a little water and pour into the sauce. Also add vinegar, crushed garlic, sugar, bay leaf, and rosemary. Season with salt to taste.

Step 5

When the marinade thickens, add the sardines and simmer for 2 minutes. Transfer the fish to a plate, pour over the sauce and cool, then refrigerate. Serve marinated sardines cold.
