You have never tried such an unusual lasagna! Prepare lasagna with chicken, pumpkin and pesto - you and your family will be amazed how such unusual ingredients are combined in this dish.

It is necessary

  • - 12 sheets of lasagna;
  • - 4 boneless chicken breasts;
  • - 600 g pumpkin;
  • - 300 ml of chicken broth;
  • - 300 g mascarpone or fat sour cream;
  • - 150 g pesto sauce;
  • - 90 g grated Parmesan;
  • - 50 g of pine nuts;
  • - 2 medium onions;
  • - 5 cloves of garlic;
  • - 10 sprigs of basil;
  • - 4 tbsp. spoons of milk;
  • - 1, 5 Art. tablespoons of flour;
  • - olive oil, ground nutmeg, black pepper, salt.

Instructions

Step 1

Dip the chicken fillet in flour. Peel and chop the onion and garlic. Heat oil in a deep skillet, put onion in it, fry it until soft, then add garlic, cook for 3 minutes. Move the garlic and onion to the edge of the skillet, place the chicken fillet in the flour, and fry for 2 minutes on each side. Pour in chicken broth, cover, cook over low heat for 7 minutes. Then sort the fillets into small, fibrous pieces.

Step 2

Add half the mascarpone and pesto to the skillet, cook for 5 minutes until lightly thickened. Then turn off the heat, add chopped basil leaves to the sauce. You can make pesto yourself, for example by mixing cilantro, garlic, lime juice, pepper, and salt in the processor. Then pour in olive oil, stir until smooth. This is a common way to make pesto and you can add other ingredients to your liking.

Step 3

Peel the pumpkin, cut into cubes, put in a saucepan, pour in 2 tbsp. tablespoons of water, simmer under the lid until soft. Season with salt, pepper, add nutmeg, mash with a fork.

Step 4

Place half of the chicken pesto sauce in a greased baking dish, cover with 4 sheets of lasagna. The next layer is pumpkin puree, do not forget to sprinkle with grated Parmesan (half). Put 4 sheets of lasagna back in, lay out the remaining sauce, cover with sheets. Mix the milk with the mascarpone, season with salt and pepper, pour over the lasagna mixture. Sprinkle with parmesan, pine nuts. Bake 40-45 minutes until golden brown.
