Curd pudding is a favorite dessert of many people. It is prepared quite simply. However, there are a couple of nuances that must be taken into account when preparing.
Ingredients:
- 5 chicken eggs;
- 100 g sour cream;
- 2 tablespoons of potato starch;
- 0.5 kg of homemade cottage cheese with high fat content;
- 200 g granulated sugar;
- 1 pack of vanillin.
Preparation:
- It is recommended to make curd pudding using a blender. Otherwise it will be very difficult to achieve the desired consistency of the "dough". First you need to take a deep dish and combine cottage cheese, sour cream and egg yolks in it. Then add potato starch and vanillin to the mass. Place the remaining proteins in a separate bowl and put them in the refrigerator for now, as they are still needed. Then the resulting mass will need to be thoroughly beat with a blender.
- Then remove the whites from the refrigerator and place them in a deep dish. The whites should also be whipped with a blender until a persistent fluffy foam forms. This will take 5 to 7 minutes.
- Then the air mass obtained from the proteins is mixed with the curd. However, this must be done very carefully. You need to transfer the protein mass very carefully and it is better to use a spatula for this. You do not need to mix the whipped masses strongly with each other, and you should also not whisk them together. The thing is that the whipped proteins share their "airiness" with the cottage cheese, therefore they must be mixed very carefully.
- After the "dough" is ready, you can start baking. First you need to prepare a form (either one large baking dish, or take a slightly smaller one). The walls and bottom of the mold are well greased with melted butter.
- After the forms are prepared, you can pour the airy curd-protein mass into them, this must be done quite carefully. Then the molds are carefully placed in an oven preheated to 220 degrees. At this temperature, the pudding will bake for exactly 25 minutes. Remember, while the pudding is baking, you cannot open the door, as it may fall off.
- Before serving the pudding to the table, you can pour it over with chocolate, yogurt, and also smear with cream. But even without these additives, the dessert turns out to be incredibly tasty, aromatic and airy.
