Step 1

Sort fruits for processing according to quality, ripeness and size. Set aside the crushed and crushed fruits for making jams, mashed potatoes, sauces, juice; rotten - discard.

Step 2

Wash fruits and vegetables thoroughly with a soft brush under cold running water. Dry them on a paper-lined baking sheet, in a colander, or on a sieve. Cover delicate berries (raspberries, strawberries, blackberries) with water for 15-20 minutes. Transfer them to a colander and drain off excess water.

Soak over steam for 20-25 minutes. Sterilize smaller containers in the oven. Place the washed and dry jars with the neck up on the wire shelf. Preheat the oven for 30 minutes. Turn it off. Remove the jars after they have cooled slightly.

Sterilize caps and rubber seals in boiling water for 10-15 minutes immediately before use.

To prepare the syrup, dissolve the required amount of sugar in hot water. Simmer for 2-3 minutes. Then filter it through folded gauze or cotton towel.

To prepare brine, dissolve table salt in water, bring to a boil. Refrigerate and strain the brine through a thick cloth.

Step 7

Before pasteurization, pour the fruit with hot syrup or marinade 1-2 cm below the neck. Cover the jars with pasteurized lids.

Step 8

Pasteurize in a water bath. Take a wide-bottomed saucepan. Place several cans in it at once. The duration and temperature of the water during pasteurization depends on the selected product and the canning recipe

Step 9

After the end of the pasteurization process, remove the cans from the water and close them with a manual machine. Place the sealed jars upside down, leave to cool completely.
