Instructions

Step 1

Traditional fondue is a special hot sauce made from cheese, wine and spices. It is believed that the dish was invented by Swiss shepherds so that dried food did not go to waste. The hearty brew could be dipped in bread and kept warm for long nights. Over time, the recipe migrated from poor kitchens to wealthy homes. Since then, the chefs have made high demands on the raw materials: only high-quality cheeses, fresh breads and certain varieties of wines. The ritual of making fondue quickly fell in love with many guests of Switzerland and spread all over the world, and on the way crossed with the culinary traditions of other countries.

Step 2

Dishes, the consumption of which involves dipping pieces of any food in hot sauce, have existed for a long time among different peoples. For example, in Italy, poultry and shrimp are eaten with a mixture of melted cheese and egg yolks. And vegetables are dipped for a few seconds in oil, boiled with anchovies and garlic. The nomads of the East traditionally cooked a thick lamb broth and then ate the meat, washed down with a thick broth. In China, this tradition has transformed over the centuries: cooked noodles, dumplings, seafood, eggs and fresh vegetables are poured with hot broth and eaten with sticks.

Step 3

All these options allowed culinary specialists in the middle of the twentieth century to fantasize about the classic fondue and create its sweet variety. The melting point of its main ingredient, chocolate, is low. So a bowl for a dessert fondue can be heated not on a fire or a burner, but on a simple candle. Hence the name of the dish - "tableron fondue", that is, cooked on a tablet candle. It is served with fruits, berries, cookies, and washed down with champagne or sweet liqueurs.

Step 4

Today there are many recipes for sweet fondue. For him, use milk, bitter, white chocolate or make a mixture of them. For new shades of taste, you can add seasonings, berry syrups, cream, liqueurs. An interesting result is obtained from a mixture of white chocolate and coconut milk with vanilla. Culinary experts have even invented caramel fondue. For him, sugar is first melted, and then heavy cream and flavors are introduced into the caramel. Marshmallow lovers melt this marshmallow with milk or cream in water. Instead of chocolate, take chocolate paste. And those who consider chocolate unhealthy make fondue even from fruits. To do this, applesauce or banana puree is boiled with milk and seasonings until soft, sometimes butter and sugar are added. And you can dip biscuit or muffins in such a mixture.
