- Ingredients for 2 persons:
- - 3 tomatoes;
- - 200 g of any long pasta;
- - 2 large cloves of garlic (or 3 medium size);
- - 2 tablespoons of olive oil;
- - 100 g of king prawns;
- - 100 g of scallops;
- - 300 g of mussels;
- - 150 ml of white wine;
- - 3-4 strands of saffron;
- - 4 tablespoons of heavy cream;
- - a small bunch of parsley;
- - 2-3 tablespoons of pine nuts;
- - zest of 1 lemon and the juice of half a lemon;
- - salt and pepper to taste.
Instructions
Step 1
We boil water for pasta. Fill the saffron with two tablespoons of water. We make crosswise cuts on the tomatoes, dip them alternately in boiling and cold water for 10-15 seconds, peel them off, cut them into quarters and remove the seeds. Cut the tomatoes into small pieces, set them aside.
Step 2
We clean the shrimps, carefully wash the shells of the mussels.
Step 3
Boil the pasta for 2 minutes less than indicated on the package. At this time, heat a little olive oil in a frying pan, fry the squeezed garlic. As soon as the garlic begins to golden, add the shrimp and scallops to the pan. Fry seafood for 2-3 minutes and transfer to a plate.
Step 4
Put mussels in a frying pan, pour in wine and water with saffron, salt and pepper to taste. We close the pan with a lid and cook the mussels for 3-4 minutes on maximum heat. We throw out the unopened shells.
Step 5
Add lemon zest, lemon juice and cream to the pan. Put the finished pasta in a colander and put it in a pan along with shrimps, scallops and tomatoes. Mix all the ingredients, leave on fire for 2-3 minutes. Sprinkle with chopped parsley and pine nuts, mix again and serve immediately.
