It is necessary

  • For biscuit cakes:
  • - 5 eggs;
  • - ¾ glass of sugar;
  • - ¾ a glass of flour;
  • - vanillin;
  • - 100-150 ml of rum or wine for impregnation.
  • For shortbread cakes:
  • - 200 g butter or margarine;
  • - ¾ glass of sugar;
  • - 2 eggs;
  • - 1-2 tbsp. l. cocoa powder;
  • - 1/3 tsp soda;
  • - 2-2 ½ cups flour.
  • For butter cream:
  • - 200 g of butter;
  • - 8 tbsp. l. condensed milk with sugar;
  • - vanillin.
  • For protein cream:
  • - 3 squirrels;
  • - 6 tbsp. l. icing sugar;
  • - ½ cup shelled walnuts.

Instructions

Step 1

First of all, prepare the biscuit dough for the cakes. To do this, very carefully separate the yolks from the whites. Set aside the yolks, and beat the whites with a mixer until they increase in volume by 3-4 times. After that, start adding a little granulated sugar. When you get a cool, strong foam, without stopping whipping, put the yolks in it, then add the vanillin and flour (mix it with the mass very carefully so that no lumps form and the proteins do not settle).

Step 2

Heat a baking dish in a hot oven and brush with butter. Cover the bottom with parchment, pour the prepared dough and place in the oven. Bake the cake for 35-40 minutes at a temperature of 200-220 ° C. Then let the biscuit cool in the form, then transfer to a dish and, freeing from the parchment, carefully cut into 2 cakes. Saturate each one with rum or wine.

Step 3

To prepare shortcrust pastry, grind chilled eggs with granulated sugar until white, add softened butter or margarine, soda and cocoa powder. Stir the mixture until smooth. Then gradually add the sifted wheat flour and knead the dough. It should be soft and elastic. Divide the dough into 3 equal parts and bake the cakes in the oven over medium heat.

Make an oil cream. To do this, remove the oil from the refrigerator a few hours before cooking. When it becomes soft, beat the butter with a mixer until fluffy. Then gradually add 1 tablespoon of condensed milk, which should be at room temperature. As soon as you get a homogeneous plastic mass, add vanillin and mix everything thoroughly.

Step 5

To make the protein cream, pour the egg whites into a saucepan and beat them until you get a thick foam that should hold its shape (this will take at least 15 minutes). Then add the icing sugar in small portions. After adding the entire amount of powder, continue to beat for another 1-2 minutes and add the walnut kernels passed through a meat grinder.

Step 6

Put a shortbread on a dish and apply a protein cream on it. Then lay the biscuit and brush it with butter cream. Place the second shortbread on top, which cover with protein cream. Then - a biscuit covered with butter cream. Lay the last shortbread on top and spread it with protein cream, and apply butter on the sides of the cake. Use a pastry syringe to make a congratulatory inscription with butter cream.
