Eggplants are vegetables that can be used to make many delicious and healthy dishes. They make preparations for the winter from eggplants, stuff them, bake them, prepare snacks and salads from them.

- - 300 g sour cream;
- - 2 boiled eggs;
- - 100 g of butter;

Step 1
Eggplant cake
Cut the eggplants into slices, sprinkle with salt and let sit for 10 minutes. Then rinse them with cold water and squeeze out. Heat vegetable oil in a frying pan, fry the eggplants in it until golden brown and put them on a sieve.
Step 2
Finely chop the boiled egg, pass the garlic through a garlic press, grate the cheese on a fine grater. In a separate cup, combine egg, cheese, garlic and mayonnaise.
Step 3
Cut ripe meaty tomatoes into slices, put them on a flat dish and brush with mayonnaise sauce. Now evenly spread the fried eggplants on the tomatoes, coat them with mayonnaise too, then put the tomatoes again. Spread layers until you run out of tomato and eggplant circles. Decorate the top layer with sprigs of parsley or dill.

Eggplant rolls
Wash the eggplants and cut them lengthwise into plates, salt and place under a press. Grate the carrots on a fine grater, crush the walnuts and garlic well. Fry the minced meat and grated carrots in hot oil separately. Then put them in one cup, add ground red pepper, nuts, garlic, sour cream and salt to your taste. Mix all components thoroughly - the filling is ready.
