- - 2 eggs

Step 1
It doesn't take a lot of effort to make pineapple muffins. First, take a pineapple, cut it into large pieces and sprinkle them with a little sugar for 10 minutes, so the pineapple will juice and the cake will be more juicy. When the pineapple is juiced, put it together with the juice in a blender and chop it into puree. Don't forget to leave some pineapple for garnish.
Step 2
Soften the butter by placing it in a warm place for 15-20 minutes.
Step 3
In a bowl, beat 2 eggs and sugar until completely dissolved. You should have a fairly lush white mass.
Step 4
Mix together the egg-sugar mixture, butter and pineapple with juice, whisk everything thoroughly. Continuing to beat, slowly add the flour and baking powder.
Step 5
Preheat the oven to 200 degrees, grease the molds with butter. Place muffin batter in each mold so that it only fills half of the mold. Place the muffins in the oven and bake until golden brown.
Step 6
Cover each finished muffin with whipped cream and top with pineapple slices. The cupcakes are ready.
