Summer is the season of berries that can be used to make various summer desserts. Berry curd cake is a great option for a light summer treat.

Instructions
Step 1
First you need to prepare the dough. To do this, the chilled butter must be sliced with a knife, while mixing it with sifted wheat flour. We repay 1 teaspoon of soda in 1 tbsp. a spoonful of vinegar or lemon juice, then add to the resulting mixture. We rub all the ingredients thoroughly with our hands.
Step 2
To prepare the filling, beat the eggs with half a glass of sugar until a strong foam forms. Combine the beaten eggs with cottage cheese (low-fat) and alter everything until smooth. We sort the berries, wash and dry slightly with a paper towel.
Step 3
Grease a small baking sheet with butter, sprinkle it with flour, lay out 3/4 of the prepared dough, evenly distributing it over the entire surface and pressing it with your hand. Put the curd filling and berries on the base, and sprinkle everything with the remaining dough on top. We place the baking sheet in the oven, preheated to 170 degrees, and bake the cake for about 40 minutes.

The finished curd cake can be sprinkled with powdered sugar and garnished with the remaining berries.
