When preparing mushroom dishes, the culinary specialist should use the ingredients that best complement the natural flavor of the mushrooms. These are, first of all, onions.

Pickled mushrooms with onions is a dish that can be cooked in minutes. It can serve as an excellent snack for any table - both everyday and festive. To prepare it, take about 250 grams of chilled pickled mushrooms (for example, white mushrooms, chanterelles, butter, champignons), drain off excess liquid with a colander, put in a salad bowl. Cut a medium onion into thin half rings, add to the mushrooms, mix gently. Then pour this mixture with two tablespoons of refined vegetable oil, add a little vinegar or lemon juice and serve.

It is best to use extra virgin olive oil for this dish.

A puff salad of mushrooms, onions and potatoes turns out to be very tasty. To make this dish, take about 200-250 grams of fried mushrooms (pre-chilled), 2-3 boiled medium-sized chilled potatoes, 1 medium onion, some mayonnaise, salt and black pepper to taste. Cut the fried mushrooms into small pieces, season with salt and pepper, put in an even layer in an enamel or plastic tray.

Brush with mayonnaise, spreading it evenly over the surface of the mushrooms with a spoon or fork. Cut the onion into thin rings or half rings and place on top of the mushrooms. Also pepper in moderation, brush with mayonnaise. Top with boiled potatoes, grated or finely chopped. Season with salt and pepper to taste, tamp lightly, brush with mayonnaise and place the tray in the refrigerator for about 1 hour to soak.

Besides ground black pepper, you can use any other spices, such as curry powder. You can also substitute low-fat sour cream for mayonnaise.

A tasty and satisfying, albeit very high-calorie dish is stewed mushrooms with onions and smoked sternum. For cooking, you will need 500 grams of fresh mushrooms, 2 medium onions, 200 grams of low-fat smoked brisket, a little vegetable oil, salt and spices to taste. Cut the onion into thin half rings and fry in highly heated vegetable oil until golden brown. Immediately after this, use a slotted spoon to transfer the onion to a small saucepan or saucepan, and put the brisket, cut into small pieces, into the pan where it was fried.

Fry it for 3-4 minutes, stirring occasionally, then transfer to the onion. In the same skillet, fry the mushrooms, cut into thin slices. Then put them in a bowl with onions and brisket, salt, add spices, pour in a little boiling water and simmer over low heat under the lid until tender. Sprinkle herbs such as dill, green onions, or parsley on top of the dish if you like. Add a clove of garlic to the dish for flavor.
