Pastila is truly a royal treat. Even in the Soviet Union, there were rumors that Belevskaya marshmallow, despite the iron curtain, fell on the table of the Queen of England herself. Currently, any hostess can please herself and her loved ones by preparing a marshmallow at home.
Ingredients:
- Fresh apples - 2 kg (can be replaced with applesauce - 1, 2 kg);
- 2 chicken eggs (only proteins are needed);
- Granulated sugar - 500 g.
Preparation:
- Put the washed, but not peeled apples on parchment paper and bake in the oven at 200 degrees for 25 minutes. The fruit should become soft and tender. Antonov apples are baked for about 10 minutes because of their consistency.
- Now, after baking, the apples must be peeled and rubbed through a sieve until an airy gruel is formed.
- Mix the applesauce with granulated sugar and beat liberally, as a result an airy mass of a lighter shade is formed, somewhat reminiscent of custard. The mixture should almost double in volume, or even more.
- Put a quarter of the whipped puree in the refrigerator, it will be needed for a layer of the future dessert.
- Put the workpiece on a sheet covered with parchment paper in advance, send it to the oven with the door ajar.
- Since the marshmallow dries for a rather long time, it is baked in a thin layer (no more than 2 cm in height) in the oven for about 7 hours at a temperature of 50 degrees.
- Cut the finished sheets into equal slices, then layer them with raw apple mass, you should get a cake.
- Leave in the oven again, only this time for 4 hours at a temperature of 60, with the door also ajar.
Apple candy is ready, you can store it for about 6 months.
