Whole-baked turkey is a traditional New Year's or Christmas dish in many countries. But its lean meat is very easy to dry out when cooking, so most often the turkey is stuffed and the recipe and cooking time are carefully observed.

- turkey - 3.5 kg;
- sausages in natural casing - 8 pcs.;
- lemon;
- smoked brisket - 500 g;
- adjika - 2 tbsp. spoons;
- soy sauce - 200 g;
- butter - 100 g;
- pepper;
- salt.
Instructions
Step 1
To prepare this dish, you will need the fattest and softest turkey possible. If you are using frozen poultry, it makes sense to defrost it at least 24 hours in advance. Defrost the turkey directly in the bag, in a cool place - the taste and quality of its meat depends on it.
Step 2
In a water bath or microwave, melt half the butter and mix with half the soy sauce. Take a regular large medical syringe, pump it with a mixture of oil and sauce, and pierce the turkey in several places, stuffing it with this mixture. Then leave the turkey to marinate for 3-4 hours in a cool place.
Step 3
Mix adjika with pepper and salt.

3, 5 hours before serving, rinse the bird and rub it with a mixture of adjika inside and out.
Step 5
Cut the brisket (for this recipe it is better to take pork, since it is more fatty) cut into thin slices. Stuff the turkey with sausages without removing them from the shell and add half of the chopped brisket. Cut the lemon in half and half plug the hole in the turkey.
Step 6
Sew the turkey skin over the lemon with cooking thread and toothpicks. Tie the bird's legs.
Step 7
Line a baking sheet with a large piece of baking foil and place the remaining slices of brisket on it.
Step 8
Place the turkey on top, cover it loosely with the edges of the foil.
Step 9
Bake the turkey in an oven preheated to 250 degrees for an hour and a half.
Step 10
Combine remaining butter and soy sauce. After an hour and a half, remove the turkey from the oven, open the foil and pour the mixture over the poultry several times, scooping it up from the bottom of the baking sheet.
Step 11
Cover the turkey with foil and place in the oven for another hour.

After that, slightly open the foil and bake the turkey at 300 degrees until it is lightly browned.
Step 13
Serve the whole bird, removing the threads and toothpicks - it is cut into portions already on the table. The filling can be left inside or placed next to it on a platter.
