Everyone should include vegetable soups more often in their diet to unload the body. Vegetable puree soup with ham is both healthy and satisfying due to the addition of ham.
It is necessary
- - 2 liters of vegetable broth;
- - 500 g zucchini;
- - 150 g of boiled ham;
- - 100 ml of 10-20% cream;
- - 2 onions;
- - a bunch of fresh parsley;
- - 3 tbsp. tablespoons of vegetable oil;
- - 1 tbsp. a spoonful of soy sauce;
- - sugar, a pinch of salt.
Instructions
Step 1
First, prepare the zucchini - peel it and all the seeds, cut it into random pieces. Peel two onions and chop finely. Pour vegetable oil into a deep saucepan, heat it, put chopped onion, fry it, stirring occasionally. Then add the chopped zucchini, simmer for 10-15 minutes, stirring occasionally. During this time, the zucchini should already be soft.
Step 2
Transfer the finished vegetables to a saucepan, cover with vegetable broth, bring to a boil. Cook for at least 5 minutes, since all the ingredients are already ready by themselves. After that, let the soup cool slightly, chop with a blender until puree.
Step 3
Cut the boiled ham into strips, fry in hot oil for 2-3 minutes to make the ham more ruddy. Add cream to the vegetable soup (an optional ingredient, added to taste), pour in the soy sauce, salt and add sugar of your choice, beat again with a blender. Cream adds tenderness to the soup, it turns out to be a very pleasant smooth consistency.
Step 4
Pour the prepared vegetable puree soup into portioned plates, put the ruddy ham on top, garnish with fresh parsley, finely chop it with a sharp knife beforehand. Serve the soup immediately, while still warm.
