- Topping:
- - 2 cups sour cream
- - 4 teaspoons granulated sugar
- - 1 teaspoon vanilla extract
- - 3-4 cups mixed berries (strawberries, raspberries, blueberries, blackberries and red currants)
Instructions
Step 1
To prepare the crust, the cracker must be chopped into crumbs in a blender.
Take a bowl and put the cracker crumbs, granulated sugar, melted butter, salt and vanilla there. Mix all these ingredients with a fork until smooth.
Gently, pressing to the bottom, distribute the dough over the baking dish, previously covered with foil. It is best to use a rectangular shape 22 * 33 cm.
Cook in an oven preheated to 180 degrees for 10 minutes at 160 C.
Step 2
Now we are preparing the filling.
Use a mixer to combine cream cheese and granulated sugar until foamy. Then gradually add eggs and vanilla extract to this mass.
Step 3
Put the prepared filling on the baked crust. Place in oven for 20 minutes.
Step 4
Finally, we prepare the topping. To do this, mix together sour cream, granulated sugar and vanilla extract. Place in an even thin layer over the filling.
Let it bake in the oven for about 10 minutes. Then let it cool completely, but not less than 2 hours, or it is best to leave it overnight.
Put the berries on top of the finished cheesecake.
Step 5
Next, carefully cut into small squares with a serrated knife. Berry cheesecake is ready!
