These delicate shortbread cookies will delight you and your loved ones not only with a pleasant delicate taste, but also with an original appearance.

Translated from French, the word "saber" means "sand". The peculiarity of this cookie is that its structure is very delicate and crumbly. It is prepared from the simplest ingredients, but it brings a lot of joy and good mood. You can also add any flavors familiar to you - vanilla, cloves, cinnamon, etc. to the dough.

Ingredients:

  • Egg - 3 pcs.
  • Butter - 220 g
  • Brown sugar - 4 tbsp l.
  • Cocoa powder - 1 tbsp. l.
  • Flour (in light dough - 140 g; in dark dough - 130 g) - 270 g
  • Vanillin - a pinch
  • Salt - 1/3 tsp

Preparation:

Put the butter in a warm place to soften (or in a water bath - but it should not melt! Just become soft).

Cook hard-boiled eggs, cool and separate the whites from the yolks. The yolks need to be kneaded well with a fork so that there are no lumps. We do not need proteins, they can be used at your own discretion

Mix yolks, salt, brown sugar, vanillin with softened butter, mix well until smooth.

Divide the resulting dough into two equal parts, add cocoa to one of them and knead well again.

Next, we knead these two parts separately. Add 140 grams of flour to the light dough, and 130 grams of flour to the dark dough.

We roll out the dough into layers of the same size, about 1 cm thick. I got a size of 14x9 cm.

Put the dark layer on top of the light one and press it a little, but so as not to deform the dough. We put the layers in the refrigerator for 30-40 minutes.

Turn on the oven 180 degrees.

We take out, trim the edges of the dough with a knife and cut into an even number of strips of the same width (I got 4 strips)

We fold the strips in two so that the dark one is opposite the light one and press lightly. We will get square dough sticks that will look like a checkerboard in section.

Cut these cubes 1 cm thick and place them on a baking sheet lined with baking paper for baking. We bake in the oven for 10-15 minutes.

Our French Saber cookies are ready! Cool and serve with tea.
