First, decide what kind of sugar you will cook. You can use orange zest, walnuts, peanuts, seeds, raisins, or cocoa as fillers.

Rinse the orange well, remove the crust and chop finely. Make sure it doesn't taste bitter, as this can spoil the taste of the finished treat. If you use nuts or seeds, peel and chop them. Rinse the raisins well and dry.

Take a shallow frying pan, pour about ¼ cup of milk into it. Add 1.5 tablespoons of butter, if desired. Sugar cooked in this way will have a more delicate taste and pleasant aroma.
Place the skillet over low heat. Pour sugar into milk, bring milk-sugar mixture to a boil. Remember to stir occasionally.
Step 4
After boiling, cook the milk-sugar syrup until the liquid evaporates completely. At this stage, the sugar has a crumbly structure. Then it begins to melt and takes on a brownish color. Stir vigorously to melt evenly.
Step 5
Pour the remaining milk into the skillet. Stir well and add filler - nuts, raisins or orange peels. You can add some cocoa. This will make brown sugar.
Step 6
Continuously stirring, cook the mixture until the milk has completely evaporated. It is very important not to digest the sugar. To determine doneness, drip some onto a plate. The cooled drop must be solid
Step 7
Grease a plate with vegetable oil and pour the prepared sugar over it. Leave until completely solidified. Break the frozen sugar into pieces.
