Cream rolls are a favorite treat from childhood. In professional pastry shops, special forms, metal, are used. But at home, you can do without them.
Ingredients for the dough:
- 350-400 g flour;
- 250 g granulated sugar;
- 160 g butter;
- 160 ml of cold water;
- 1 pinch of salt.
Ingredients for the cream:
- 1 can of condensed milk;
- 180 g butter;
- 5 g vanillin.
Preparation:
- Pour salt into the water and stir until completely dissolved. Then, slowly adding flour, knead a tight dough. Put the dough in a plastic bag for 10 minutes, then remove and knead again. Then put it back in the bag for 20 minutes.
- Take out the dough and roll it out to a thickness of 5 millimeters, while the edges are rolled out so that they are thinner than the middle.
- Soften butter and mix with flour (3-4 tablespoons). Form a rectangle and place in the center of the dough.
- Fold the dough with butter in an envelope and carefully roll it out from the middle to the edges (the dough should not break). The thickness is 1 centimeter. The edges are thinner than the middle. Fold back into an envelope and leave for 20 minutes. Roll out again, fold in an envelope and leave for 30 minutes. The dough is ready.
- Now let's make the shapes for the tubes. We need food foil, stapler and cardboard. We make cones out of cardboard, fix them with a stapler and wrap them with foil. Bend the edges of the foil inside the cone.
- Roll out the dough thinly (½ centimeter), cut into strips 2 centimeters thick. The height should be about 20 centimeters.
- We wrap the overlapping molds with strips of dough. Cover the baking sheet with foil, put the tubes on it.
- Put a baking sheet in a heated oven (up to 180 degrees) for 10-12 minutes. Puff pastry bakes quickly in the oven, so don't get too far away from it. Remove the baking sheet from the oven and while the tubes are cooling, prepare the cream.
- Combine condensed milk and butter and stir well, add vanillin. You do not need to cook condensed milk. Fill the cooled tubes with cream.
