"Sable" - shortbread cookies, especially loved by the inhabitants of the northern regions of France. We will take his classic recipe as a basis and complement the delicate taste of crumbly cookies with a cloud of whipped proteins, which will hide sweet and sour dried cranberries!

It is necessary

  • For 30 large cookies:
  • - 200 g flour;
  • - 60 g of sugar;
  • - 60 g butter;
  • - 0.5 tsp baking powder;
  • - 1 egg;
  • - 40 g of your favorite nuts;
  • - 100 g dried cranberries;
  • - 2 squirrels;
  • - 120 g of sugar.

Instructions

Step 1

We take the oil out of the refrigerator in advance so that it softens. In a bowl, beat eggs with 60 grams of sugar, stir in the butter. Then, in small portions, sift the flour with baking powder to the wet ingredients. Mix until smooth.

Step 2

Put the oven to heat up to 180 degrees. Line a baking sheet with baking paper. Grind the nuts with a knife or a special mill into medium or coarse crumbs (it all depends on your preferences). Stir into dough.

Step 3

Roll out the dough into a layer a little less than a centimeter thick. Cut out the cookies using a glass, glass or cookie cutter about 4 cm in diameter. Transfer the blanks to a baking sheet and send to the oven for 10 minutes.

Step 4

For the meringue, beat the whites, adding sugar in small portions, until stable glossy peaks. Transfer the protein mass into a pastry syringe. Remove the cookies from the oven, put a few pieces of cranberries on each, and cover them with proteins on top with a syringe.

Step 5

Return to the oven on the upper level of the oven to brown the meringue, then reduce the temperature to 110 degrees and bake for half an hour. Cool and serve.
