Golden crispy fried potatoes and tender, juicy steamed cutlet. From the point of view of taste, almost a perfect combination, isn't it ?! Let's try to combine them in one dish and prepare Belarusian pancakes - potato pies stuffed with minced meat. Serve them to the table with sour cream and herbs - as they say, eat your mind!

It is necessary

    • Serves 4:
    • For filling:
    • 0.4 kg of ground beef (veal);
    • 1 large onion
    • 150 g fat ham;
    • 1 tbsp. l. culinary cream (20% fat);
    • 2 cloves of garlic;
    • salt
    • spice.
    • For potato dough:
    • 1-1.5 kg of potatoes;
    • 1 egg yolk;
    • salt;
    • 1 tbsp. l. flour.
    • Moreover:
    • vegetable oil for frying;
    • greens
    • tomatoes for decoration;
    • sour cream 15-20% as a sauce.

Instructions

Step 1

Wash the potatoes, peel and cover with cold water for 7-10 minutes.

Step 2

Pass the minced meat with onion through a meat grinder.

Step 3

Chop the ham into small cubes, add to the minced meat.

Step 4

Also add garlic to minced meat, after grinding it in a garlic press.

Step 5

Salt the minced meat, add spices, cream and knead well until a homogeneous thick mass.

Step 6

Remove the potatoes from the water, grate on a medium grater into a deep bowl.

Step 7

Salt the grated potatoes, beat in the egg yolk, add flour and knead very well with your hands.

Step 8

Put the potato mass in cheesecloth and squeeze thoroughly. Then knead the dough again.

Step 9

Make a tortilla out of a medium-sized piece of potato dough, put the filling in the middle and shape the pie so that the filling remains in the middle, tightly surrounded on all sides by the potato mass.

Step 10

Heat vegetable oil in a frying pan, put potato pancakes in it. Fry on each side for 3-4 minutes.

Step 11

Place the potato pancakes on a folded paper towel or napkin to remove excess fat.
