On the night of December 24-25, Catholics from different countries celebrate Christmas. Traditionally, it is customary to spend this day with the family and arrange a festive dinner consisting of Christmas dishes. In each country they are different: in some they serve stuffed poultry, and in others - carp, blood sausage or ham. The Christmas table is not complete without sweets. For example, in Denmark it is customary to cook rice porridge with raisins and cinnamon, and in England - rum pudding.

It is necessary

  • For baked carp "Christmas on the doorstep":
  • -1 carp (about 1, 2 kg);
  • - 350 g of onions;
  • - 250 g of champignons;
  • - 250 g of walnuts;
  • - 2 tomatoes;
  • - parsley;
  • - vegetable oil;
  • - lemon;
  • - ground black pepper;
  • - salt.
  • For Christmas pudding:
  • - 500 g of dark raisins;
  • - 200 g pitted prunes;
  • - 200 g cinnamon (very small raisins);
  • - 100 g dried figs;
  • - 100 g of a mixture of dried fruits;
  • - 125 ml of whiskey;
  • - 100 g of dark brown sugar;
  • - 4 eggs;
  • - 180 g butter;
  • - 300 g flour;
  • - ½ tsp. baking powder;
  • - 2 tsp ground cinnamon;
  • - 2 tsp ground nutmeg;
  • - 1 tsp ground ginger;
  • - rum.

Instructions

Step 1

Baked carp "Christmas on the doorstep"

Carefully wipe the champignons with a damp cloth and cut into small pieces. Peel the walnuts and chop with a knife or crush in a mortar. Peel the onions, cut into small cubes and fry in vegetable oil along with finely chopped mushrooms. Then add chopped walnuts and chopped parsley. Season with salt and pepper to taste.

Step 2

Peel the carp, rinse well under running water, rub with a mixture of salt and ground pepper and stuff with cooked minced mushrooms, onions and walnuts. Then sew up the belly of the fish with thread.

Step 3

Place the carp in a fireproof baking dish. Make small cuts along the back and insert a lemon wedge into each. Lubricate the fish with vegetable oil, pour a little water into the mold and place in an oven heated to 200 ° C for 30 minutes.

Step 4

Carefully remove the thread from the finished carp and garnish the fish with parsley sprigs, lemon and tomato slices before serving.

Step 5

Christmas pudding

Combine all dried fruits with whiskey and set aside for a while, stirring occasionally, until dried fruits have absorbed all the liquid. Then add ground ginger, brown sugar, eggs and stir.

Step 6

Melt the butter over low heat, then cool to room temperature and stir in the dried fruit mixture.

Step 7

Sow wheat flour, combine it with dry ingredients: baking powder and ground spices. Then add the dry mixture to the dried fruit and mix well.

Step 8

Grease special pudding molds with butter and flour. Then fill them with the prepared mass (not to the brim) and smooth the surface. Cover and wrap the molds with wax paper and foil.

Step 9

Place the pudding tins in a water bath, reduce heat to low and cook for about 6 hours, making sure to add water occasionally.

Step 10

After this time, let the pudding cool completely, remove the foil and paper, cover with a new layer of paper (preferably two), cover with a cloth or foil. Tie again and set in a cool place.

Step 11

To soften the Christmas pudding, put it back in the steam bath for an hour and a half before serving.

Step 12

Flip the finished Christmas pudding onto a serving platter. Pour rum, light and serve to the table while burning.
