On the eve of Christmas, January 6, Christians set a festive table, on which they always put 12 lenten dishes, the main of which is kutia (sochivo, kolivo). By tradition, dinner begins with it and everyone sitting at the table should eat at least a spoon. Products for Christmas kutya have their own symbolic meanings: wheat symbolizes resurrected life, honey - well-being and health, poppy - prosperity. The traditional recipe for this dish has been known since ancient times.

It is necessary

    • 0.5 kg of wheat;
    • 1 glass of poppy seeds;
    • 1 glass of raisins;
    • 1 cup walnuts
    • 100 g of honey;
    • 500 g of dried fruit for the uzvar (set).

Instructions

Step 1

Rinse the wheat well, before it was pounded with a little water to cleanse the chaff, but now the store sells already refined grain. Then soak for 3-4 hours to cook faster. Boil the wheat for at least 2 hours until soft. Finished grains are whitish in color.

Step 2

Rinse the poppy with hot water and cover with boiling water. When it cools down, drain the water through a sieve and grind it in a mortar until poppy milk appears. Combine poppy seeds with cooled wheat.

Step 3

Rinse and pour boiling water over the raisins, drain the water after cooling. Chop the nuts and fry if desired. Add both to the rest of the food and mix well.

Step 4

Prepare an uzvar from dried fruits: apples, pears, compote, only with more than usual amount of fruit, a very healthy drink, which is also always present on the festive Christmas table.

Step 5

Dissolve honey in 1 glass of cooled Uzvar and add to kutya. You can dissolve honey in warm boiled water as a last resort. This is done so that all products are better saturated with honey, because honey is already thickened by this time. Christmas kutia is ready.
