It is customary to cook Kutya or Sochivo for Christmas and Epiphany. It is believed that the richer, sweeter and richer the kutia, the better the coming year will be.

Step 1
The easiest way to cook kutya is from rice, rather than the old-fashioned way from wheat. Thanks to the use of the Russian oven, our ancestors could cook wheat for 2-3 days. But rice kutia is no less healthy and noble dish; besides, rice is cooked much faster than unprocessed wheat.
Step 2
Rice is measured out and thoroughly washed in cool water 3-4 times. The water should be completely clear. Rice is poured with clean water in a ratio of 2, 5-3 parts of water for one part of cereal. Pour the prepared rice groats with water and cook until tender.
Step 3
While the rice is boiling, the poppy is poured with boiling water, covered with a lid and left to swell for about half an hour. Gently drain the remaining water from the poppy through cheesecloth and grind with a blender to a state of "milk". Dried apricots and raisins are thoroughly washed under running water, if the dried apricots are dry, then they are poured with water for 10-15 minutes. Drain water from dried fruits, dry, sprinkling on a towel, while large dried apricots can be cut into small pieces with a knife.
Step 4
Heat the nuts a little in a frying pan without oil until a pleasant nutty aroma appears, then cool and chop with a knife. Mix rice, dried fruits, nuts thoroughly, add honey and leave to stand for a while. The traditional food for Christmas and Epiphany is ready.
