For breakfast, sometimes you want an omelet or crispy croutons! But to prepare them, you will have to master the simple science of handling chicken eggs, namely, to learn how to break them correctly.
How to break an egg with instruments
A raw egg can be broken in two ways, and the first is using cutlery such as a fork or knife. First, take the knife and the utensil into which you are going to break the egg. Please note that the knife must be sharp. Take the egg in the hand that suits you best, depending on whether you are left-handed or right-handed. You need to hit in the middle, with a quick and sharp movement. The egg will crack in the center. If the crack is very small, hit again.
Remember not to beat in such a way as to break the egg right away. Once the shell is cracked enough, set the knife aside, grab the egg halves with your hands and pull them apart slightly. In this case, the contents will slowly drain into the dish. If you separate the halves a little tighter, the egg white and yolk will seep out faster. With this method, nothing superfluous should get into the dishes.
How to break an egg on the edge of a bowl
The second most common method is to break eggs on the edge of a table, bowl, or pan. A good visual example is a scene from Nine and a Half Weeks in which the lead actor, Mickey Rourke, smashes raw eggs on the edge of a bowl while making breakfast.
You don't need any other items. Take an egg in one hand and lightly hit the edge of an object, be it the edge of a table or a bowl. With this method, the egg should be divided into two halves, and the contents should drain into the dish. Both shells will remain in your hands. No debris will get into the container. If the egg is not cracked, tap again. This method is considered the most accurate. But you need to get used to it, perhaps you will not succeed the first time.
If you need to not only break the eggs, but separate the yolk from the protein, in both cases, hold the other half of the shell with one half, allowing the protein to flow out into the substituted container.
There is a way for professional chefs to break eggs as follows. It is necessary to hold two eggs in one hand and press them against each other. However, this requires a bit of dexterity and skill. Otherwise, instead of beautifully broken eggs, you will have a mixture of shells, yolk and white in your hands.
Also, technical progress does not leave the kitchen without its attention. And now there is a special device in order to break eggs, which is called the "egg breaker for chicken eggs."
