To prepare 2 servings you will need:
• 2 chicken breasts (about 350 g), • 1 large red onion, • 2 tablespoons of wholemeal flour, • 40 g of prunes (preferably unsweetened or slightly sweet), • 1 spoon of vegetable oil (both sunflower and olive oil are suitable), • Pepper and salt to taste.
Preparation
• Cut the meat into medium-sized pieces and season lightly with pepper and salt. Chop the onion.
• Fry the onion in one tablespoon of oil, add the chicken. Fry the meat until it is lightly browned. Then sprinkle the meat with coarse flour and fry for a while.
• Add prunes and about 200 g of water. You can also add 100 g of port.
• Close the lid, place in the oven and bake at 220 ° C for about half an hour.
• After that, remove the meat and chop the remaining sauce until smooth (this can be done with a blender). If it's too runny, fix it on the stove. Otherwise, dilute with water.
• Add some salt to the sauce, if necessary. You can also add freshly ground allspice.
• Now you can safely serve the sauce with juicy meat and properly cooked rice.
Rice Cooking Products:
• 180 g of rice (preferably steamed), • 1 onion, a few dried cloves, • 2 tablespoons of vegetable oil (olive oil is ideal), • salt.
Cooking rice
• Rinse the rice under running water in a colander. Peel the onion and insert some cloves into it.
• Pour 2 tablespoons of oil into a saucepan and, when it warms up, lightly fry the rice in it.
• Fill with water (one and a half times the volume of rice, which is about 300 ml), add a teaspoon of salt and insert the onion in the middle. Close the cover.
• Cook for 20 minutes. During this time, the rice should be cooked.
