Ingredients:
- 180 - 200 g butter;
- 0, 5 - 1 glass of sugar;
- 8 egg yolks;
- 100 g flour;
- 1, 5 - 2 glasses of cream;
- jam or jam.
Preparation:
Melt the butter in a water bath and cool slightly, then add the egg yolks, shabby with sugar, and mix thoroughly with a wooden spatula. It is better to stir in one direction until a homogeneous mass is formed.
Pour 3/4 of the cream into a saucepan, add flour, put on the stove and boil, stirring occasionally, to form a moderately thick dough. Remove the resulting mass from heat and let it cool, then add the egg yolks with sugar and butter, as well as the rest of the cream. Stir the mixture until a homogeneous dough is formed.
The pancakes should be baked over low heat so that they can be completely baked. Since the pancakes are very delicate and thin, they should be flipped directly onto the plate and not removed with a spatula. After cooking, the pancake is sprinkled with a thin layer of sugar. Pancakes are served with jam or jam to taste.
