The name "Ptifour" comes from the French language (petits fours) and is used to refer to an assortment of small biscuits (or cakes) of different varieties. Ptifur cake is made from one dough (shortbread, biscuit or puff pastry), but differs in additives and decoration.

  • - 120 g flour;
  • - 6 eggs;
  • - 80 g marzipan;
  • - 80 g of sugar.

  • - orange jam.
  • Glaze:
  • - 300 g of icing sugar;
  • - 2 egg whites;
  • - juice of half a lemon.

Instructions

Step 1

Separate the whites from the yolks and beat them until a thick foam forms. Stir the yolks, marzipan and sugar with a mixer until smooth. Put the proteins in the dough and add the sifted flour.

Step 2

We alter all the contents with a spatula or a whisk. We turn on the oven for heating. Cover the baking sheet with baking paper and put half of the dough on it in the form of small cakes.

Step 3

Spread the rest of the dough on a baking sheet with a thin layer. We bake the tortillas in the oven for 15 minutes, the biscuit for 10 minutes at a temperature of 180 degrees.

Step 4

Remove the finished cakes from the baking sheet along with the paper and let them cool. Sprinkle the powdered sugar on a sheet of baking paper and flip the hot sponge cake onto it. The paper on which the biscuit was baked should be removed immediately.

Step 5

When the cakes are cool, remove them from the sheet using a wide thin knife. Grease some of the cakes with chocolate pudding and cover them with the remaining cakes, pressing down a little.

Step 6

Cut the biscuit into 3 equal parts. Grease two parts with orange jam, and cover a layer of jam with pudding. Carefully place the oiled parts on top of each other and cover with a dry biscuit cake. Press the biscuit on top with a light press and leave for 30 minutes.

Cut the biscuit into small rectangular pieces (3x5 cm).

Let's start preparing the glaze. To do this, mix egg whites, 2/3 powdered sugar and lemon juice in a bowl. Beat the entire contents with a mixer until smooth, while adding the remaining powder.

Step 9

Cover the cakes with cooked icing, let dry and arrange them in paper baskets.
