Goose with prunes is not a dish for every day. Its preparation takes time, attention and skill. But how pleasant it is on a holiday to get a stunningly fragrant work of culinary art out of the oven and put it in front of enthusiastic guests. But before inviting the guests "to the goose", it is worth practicing at least once.

    Step 1

    Grind the cumin, coriander and black pepper in a mortar. Add salt to the spice mixture. Gut and wash the goose. Cut off the wings. Make several punctures in the skin with a fork or knife. Rub the goose thoroughly with the spices and salt. There is no need to add spices inside the bird, otherwise the prunes will acquire an unpleasant aftertaste.

    Place the goose in a large bowl, cover with a towel or plastic wrap and marinate for 2 hours.

    Prepare the filling for the goose while it is marinating. Wash the prunes. Remove the peel and core from the apples and cut them into cubes. Stuff the goose with the fruit filling. Wrap the foil around the legs of the goose to prevent them from burning.

    Step 4

    Preheat oven to 220 degrees. Place the stuffed goose upside down in a roaster or in a deep baking sheet and place in the oven.

    Peel the potatoes and cut them in half if the tubers are small and in four if the tubers are large. Peel the head of garlic and divide it into cloves, but do not remove all the husks from the cloves.

    Bring the goose out of the oven in 20-30 minutes and pour abundantly with the melted fat. Repeat the process two to three times. If the goose is large and fat - about three kilograms, then you need to bake it for a total of 2, 5 -3 hours. It will take about two hours for a two-kilogram goose. Half an hour before readiness, remove the bird from the oven and carefully drain the accumulated fat from the roaster into a fireproof dish.

    Step 7

    Pour wine abundantly on the goose after you have poured the fat from the cooking utensils. Put in the oven for another half hour.

    Step 8

    Place in the bowl where you poured the goose fat, potatoes and garlic, sprinkle them with caraway seeds and salt. Place the potatoes in the goose oven for half an hour, if space permits. If not, prepare the side dish after the goose is done.

    Step 9

    Place the goose in the middle of a large platter. Take some prunes and apples out of it and place them next to the goose. Place the garlic potatoes around. The baked goose with prunes is ready!
