Quiche is an open cake that can serve as a full breakfast or dinner. Fillings can be any: vegetable, fruit, fish, meat or mushroom. The name of the pie is firmly entrenched in French cuisine, but the French adopted its recipe from the Germans of Lorraine. Basically, the pie was made from the remnants of food (pieces of meat, vegetables) and dough, which remained when kneading bread.

- - 100 g of parsley;

Step 1
Prepare the dough. Combine sifted flour, softened butter, egg. Knead elastic dough and refrigerate for 30 minutes. Boil jacket potatoes in salted water, chill and peel. Cut the tomatoes into rings.
Step 2
Make meatballs. Add salt, pepper, 1 tablespoon of cold water, diced tomato, finely chopped onions and chopped parsley to the minced meat. Stir well and let sit for 5 minutes.
Step 3
Prepare the fill. Mix the cream with 3 eggs, salt, pepper, add dry parsley, dill, chop the basil leaves, whisk well. Form the minced meat into balls, fry them in vegetable oil and place on a paper towel.
Step 4
Roll out the dough, put in a baking dish, pre-oiled with vegetable oil. On the dough, spread the boiled potatoes grated on a coarse grater, salt, put the meat balls in a checkerboard pattern, alternating with tomato rings.

Pour the sauce over the meatballs and tomatoes so that it is flush with the meatballs. Bake at 180-190 ° C for 40-45 minutes. Decorate the quiche with herbs.
